研究表明雨生红藻来源的虾青素在多种溶剂和高温、低温贮存条件下均可保持稳定,可用于食品、医药和保健品[3,4]。美国食品和药物管理局和欧盟早在90年代就通过了虾青素作为食品添加剂使用的申请[5],2010年中国食品安全法也批准雨生红球藻作为新资源食品[6]。总之,虾青素具有巨大的市场潜力和广阔的应用前景。
