虾青素分子结构中有很长的共轭双键,此外在链末端还有由不饱和的酮基和羟基构成的α-酮羟基,具有活泼的电子效应,从而使虾青素极易与自由基反应并将其清除,具有极强的抗氧化性能。虾青素的抗氧化活性比β胡萝卜素高约 10倍,比天然维生素E高500倍,因此获得了“超级VE”之称[1]。
